Mit der Zunge wird das Gras abgerupft und ohne viel zu kauen, heruntergeschluckt. Das Gras landet jetzt im Pansen, wo es von Bakterien und anderen Mikroorganissmen zersetzt wird. Vom Pansen wandert die zersetzte Nahrung in den Netzmagen. Hier wird der vorverdaute Speisebrei sortiert. Zu wenig zerkleinerte Nahrungsteile befördert er portionsweise durch die Speiseröhre zurück in das Maul. Jetzt wird die Nahrung ein zweites Mal gekaut – daher stammt auch der Begriff „Wiederkäuen“ – und geschluckt.
Die genügend zerkleinerte Nahrung gelangt vom Netzmagen in den Blättermagen. Hier wird dem Speisebrei Wasser entzogen. Die eigentliche Verdauung der Nahrung erfolgt im letzten der vier Mägen, dem Labmagen.

zählt zu den Innereien und besteht vorwiegend aus Muskelgewebe, das bei der Zunge besonders zart und von mildem, aber typischem Geschmack ist. Beim Schlachter muss man Zunge extra vorbestellen, weil viele Verbraucher gar nicht wissen, wie man die zubereitet oder aber gruseln sich schon bei dem Gedanken. Nun, wer sich Ochsen hält, sollte alles vom Tier verwenden und essen und dazu gehören eben auch Innereien. Ich habe mir eine gepökelte und geräucherte Rinderzunge bestellt und sie im Slowcooker zu

nach einem Rezept von Vincent Klink verarbeitet. Er nimmt eigentlich Zwetschgen und die Zungenmenge betrug nur etwa 500 Gramm. Uns hat es sehr gut geschmeckt, die restliche Zunge genossen wir in Scheiben auf Brot. Die Zunge war butterzart.

Rezept für Rinderzunge, die oft als Fleischteil verschmäht wird. Hier wird sie von Kardamompflaumen begleitet.

Zutaten:

  • 1 Zwiebel
  • 2 Nelken
  • 1 Lorbeerblatt
  • 1 Rinderzunge, gepökelt und geräuchert (ca. 1500 g)
  • 6 Pfefferkörner
  • Etwas Salz
  • 500 Gramm Pflaumen,entsteint; Original Zwetschgen
  • 1 Zitrone, der Saft einer Hälfte und die Schale
  • 1 Teel. Speisestärke
  • 250 ml roter Portwein
  • 1 Essl. Zucker
  • Etwas Pfeffer
  • 1/2 Teel. Kardamom
  • 1 Sardelle, eingelegt
  • 80 ml Weißwein
  • 1 Teel. Apfelessig
  • 3 Essl. Olivenöl

ZUBEREITUNG

  1. Die Zwiebel schälen und mit Nelken und einem Lorbeerblatt spicken. Die Zunge in einen Topf mit soviel Wasser geben, dass sie gerade bedeckt ist, einmal aufkochen, die gespickte Zwiebel und Pfefferkörner (kein Salz!) dazugeben und köcheln lassen. Nach einer halben Stunde das Wasser probieren, wirkt es versalzen noch etwas Wasser hinzugeben, ist es zu fad etwas Salz zugeben. Die Zunge ca. noch 1 – 1,5 Stunden kochen. Für den Gartest eine Fleischgabel an der dicksten Stelle tief einstechen, wenn sich diese ganz leicht herausziehen lässt, ist die Zunge gar. Die Zunge in eine Schüssel mit kaltem Wasser geben, die dicke Haut abziehen und lauwarm abkühlen lassen.
  2. Die Zwetschgen waschen, abtropfen lassen, halbieren und entkernen. Zitrone heiß abwaschen, trocknen und etwas Schale abreiben, dann halbieren und aus einer Hälfte den Saft auspressen. Stärke mit 1 EL Portwein vermischen. Portwein mit Zucker, Zitronenschale, Zitronensaft, etwas Pfeffer und Kardamom in einen Topf geben und aufkochen. Die aufgelöste Stärke einrühren, aufkochen und die Zwetschgen untermischen. Kurz kochen, den Topf vom Herd ziehen und etwas abkühlen lassen.
  3. Die Zunge in dünne Scheiben schneiden, fächerförmig auf den Tellern auslegen.
  4. Sardelle fein hacken und mit Weißwein, Essig und 3 EL Olivenöl gut vermischen. Mit Pfeffer und Salz abschmecken. Die Zungenscheiben mit dem Dressing beträufeln. Die Zwetschgen in die Tellermitte geben und servieren. Dazu passt Baguette.

FÜR DIE ZUBEREITUNG IM SLOWCOOKER wie in Schritt 1 verfahren, jedoch die Zunge mit der gespickten Zwiebel in den Keramikeinsatz des Slowcookers geben und 8 – 10 h auf LOW garen.

It’s Potluck Week at I heart Cooking Clubs. That means we can choose a dish from any of our other IHCC chefs. I fell in love with the Pizza Passion Series from Villeroy & Boch. So it was a must to make pizza and serve it on the pizza platter *. I chose

and served it on that pizza platter. Special markings on the edge of the platter make dividing pizza into eight even slices easy as pie. I used my for over ten years tried and tested pizza dough recipe from King Arthur Flour**06.10.2019. It works well without any improver, dough flavour or cheese powder. I still have some pizza dough left in the fridge, there will be another pizza this week.

You can’t go wrong with that classic topping of salami, tomato and mozzarella. Just a delicous crisp pizza.

Curtis Stone’s Tomato-Salami Pizza

Ingredients:

  • 400 grams-ball homemade pizza dough
  • 30 ml extra-virgin olive oil
  • 2 teaspoons finely chopped garlic
  • 45 grams salami, paper-thin slices
  • 220 grams tomato, cut into 5mm-thick rounds
  • 150 grams mozzarella cheese, torn into 5cm pieces
  • Sea salt and freshly ground black pepper

Instructions

  1. Position an oven rack in the bottom third of the oven. Place a pizza stone on the rack and preheat the oven to 250°C/230°C fan-forced-285°C/265°C fan-forced (as high as possible).
  2. Stretch out dough ball with floured hands, or roll it out on a floured work surface, until it is about 30cm in diameter (the dough does not have to be round). Dust a pizza paddle with flour and place the dough on the paddle.
  3. Working quickly, drizzle and rub 2 tablespoons of the extra-virgin olive oil over the dough. Sprinkle half of the garlic evenly over the dough and gently rub it into the remaining extra-virgin olive oil. Arrange half of the salami and tomato slices in a single layer, overlapping slightly, on the dough, leaving a 2.5cm-wide border around the circumference. Scatter half of the cheese on top. Season with salt and pepper.
  4. Carefully slide the pizza off the paddle and onto the hot pizza stone in the oven. Bake for 8 to 12 minutes, or until the crust is crisp and golden brown on the bottom and the cheese has melted and begun to brown. Transfer the pizza to a cutting board.
  5. Using a pizza cutter or a large knife, cut the pizzas into wedges and serve.

The rest will be fermented to red cabbage sauerkraut. In Europe feta cheese is – like Parmesan – a protected designation of indication. Feta has to be produced in Greece. I used greek-style cheese instead. Cold-pressed rapeseed oil is the German answer to olive oil. All came together to a delicious salad also for lunch at work.

Easy recipe for warm Red Cabbage Salad

Ingredients:

  • 35 grams sunflower seeds
  • 1/2 teaspoon brown sugar
  • fine grain sea salt
  • 1 tablespoon rapeseed oil
  • 1 onion, diced
  • 1 clove garlic, minced
  • 230 – 250 grams red cabbage, quartered and cut into thin ribbons
  • 1/2 teaspoon fresh rosemary, minced
  • 30 grams golden raisins
  • 2 generous tablespoons balsamic vinegar
  • 20 grams greek-style cheese, crumbled
  • Parmesan cheese, freshly grated to garnish

Instructions

  1. Toast the sunflower seeds in a dry pan over medium heat until golden brown. Sprinkle on the sugar, and a couple pinches of salt. Stir until the sugar melts and coats the seeds. Transfer the seeds immediately to a plate so they don’t stick to the pan. Set aside.
  2. Heat the oil in a large skillet and saute the onion for a minute or two with a couple pinches of salt. Stir in the garlic, and the cabbage, and a few more pinches of salt. Stir and cook for just a minute or so, or until the cabbage softens up just a touch. Then stir in the rosemary, most of the raisins, and the vinegar. The cabbage will continue to get more and more tender even after you remove it from the heat, so keep that in mind, and do your best to avoid overcooking it – where it collapses entirely. Fold in half of the feta cheese, most of the sunflower seeds, then taste. Serve warm Red Cabbage Salad garnished with the remaining raisins, greek-style cheese, sunflower seeds and Parmesan cheese.
