I own a butan torch, but we didn’t use it for a long time, because my son used it to light a teewarmer candle. Gladly I got a new kitchen one year ago with a counter top of artificial stone, so that I didn’t have to see this solution anymore. But this Tuesday with Dorie the torch got a new chance.
Dorie’s recipe differs not much from the one I normally use, but I think the amount of sugar in the crème could be decreased. And Dorie often uses vanilla extract instead of vanilla pods.
The most beautiful thing is knocking with the spoon on the caramelised sugar to break it and then enjoying both: The soft crème and the crisp sugar. To die for
