Dianne of Dianne’s Dishes has chosen Florida Pie on pages 340 and 341 from Baking: From My Home to Yours* for this week’s recipe. During our vacation in Florida we came to appreciate Key Lime Pie. Dorie’s recipe recommended a Graham cracker crust, but I adapted the sweet crust from the The Most Extraordinary French Lemon Cream Tarts for a 16 cm tin. For that reason I halved the filling.
Verdict: We enjoyed the pie on a warm sunny day last weekend. It was very refreshing and we liked the addition of coconut flavour. We’ll bake it again.
