Mixed Beet Salad

I am not a huge fan of red beets. But I like yellow and white beets, and this absolutely delicious salad helped to overcome the red-beetroot-trauma out of my childhood.

Mixed Beet Salad

Yield: 12 servings

Ingredients:

  • 3 yellow beets, fist sized
  • 2 white beets, fist sized
  • 4 red beets, fist sized

DRESSING

  • 3 red onions, peeled and diced
  • 100 grams walnuts, chopped
  • 90 ml= 6 tbsp. balsamic vinegar
  • 90 ml= 6 tbsp. walnut oil *
  • salt and pepper to taste

Instructions:

  1. Steam the beets in a steamer at 100 °C about 40 – 50 minutes, peel and discard skin.
  2. Cut beets into bite-size pieces
  3. Combine all ingredients for the dressing in a jug and drizzle over the salad. Combine and serve

total time: 1 hour
preparing time: 10 minutes
cooking time: 50 minutes
