Dorie Greenspan says the bread is moist yet still showcases cornmeal’s crumbliness. I added corn kernels, crisp bacon, chopped scallions and grated cheddar cheese, I substituted the whole butter with 3 tablespoons bacon fat and 5 tablespoons butter.
