Bacon & Prune Cake

150 | grams | Flour | |
1 | pack | Baking powder | |
3 | Eggs, size M | ||
1 | pinch | Salt | |
2 | pinches | Pepper | |
100 | ml | Sunflower oil | |
125 | ml | Milk | |
100 | grams | Greyerzer, grated | |
200 | grams | Bacon, diced * | |
80 | grams | Prunes, stoned |

Directions
Preheat oven to 180 °C (160 °C fan. In a bowl mix thoroughly flour and baking powder, add eggs and whisk well. Add oil, warm milk and grated cheese. Fry bacon without fat about 5 minutes unitil golden.* Mix together prunes and bacon and add to the batter. Pour into baking tin and bake about 45 minutes.
Note Ulrike: I lined the tin with paper
* While preheating the oven I put a pan with the bacon into the oven. To remove the excess fat put on kitchen towel. Sprinkle prunes and bacon with little flour and add to the batter.

I love the cross section of the loaf showing the pink of the ham and the black prunes! Looks delicious! By the way, thanks for tip about Quark – I’ve seen it in the supermarkets here but didn’t know what it was!
Looks fantastic! Great mix of tastes. My mom gave me a couple of her cookbooks a few years ago and I have yet to make something that actually works as the recipe is written…weird!
