Capers & Trout Muffins
Capers & Trout Muffins is a classic combination of trout, lime and capers in a muffin!
Capers & Trout Muffins
Yield:6 servings
Hearty muffins with capers and trout
Ingreients
- 130 gram Flour
- 1/2 pack Baking powder
- 1 pinch Baking soda
- 1 Egg size M
- 40 ml Olive oil
- 125 grams Plain yogurt
FILLING
- 125 gram Trout filet, smoked
- 1 small Jar capers, about 30 g grams
- 1 teasp. Mixed herbs, chopped
- 1 teasp. Olive oil
- 1 tablesp. Crème fraîche
- 1 dash Lime juice
TO SERVE
ZUBEREITUNG
- Preheat oven to 190° C/fan 175° C/gas mark 2. Grease or place paper-liners in 6 muffin cups.
- n a large mixing bowl stir together flour, baking powder and soda. Set aside.
- In a bowl mash trout filets with a fork. Drain capers add on and mix with crème fraîche, lime juice, herbs and oil until all comes together.
- In a small bowl, lightly beat the eggs; add oil and yoghurt. Pour into dry ingredients and stir just until moistened.
- Spoon half of the batter into the greased or paper-lined muffin cups. Divide capers-trout mixture into 6 parts, form small balls and place in the center of each muffin. Spoon remaining batter over the mixture. Bake for 30 minutes backen. Let cool on wire rack 3-4 minutes, then remove muffins from pan and cool completely on wire rack.
- Serve each muffin with a quarter of lime slice.

Wow! Now that is an unusual combination! But it sounds wonderful and I love that the fish is contained in a layer in the middle. Do they keep well? So inventive too!
