Microgreens are a rich source of vitamins, minerals, trace minerals, enzymes, antioxidants, chlorophyll. They have a spicy flavor that tastes very much like spicy mustard that develops as you chew. The mustard flavor is not overpowering. Perfect match with omelett.

I am curious which greens Donna, Ellen, Kayte, Margaret, Nancy and Peggy will use.

Oh, this is a splendid recipe! I love micro greens and the thought of a mustard taste is really appealing to me. I will try this…I have never done micro greens with omelette before. Such nice photos of it all.

I would never have thought to put these greens in an omelette! Although I do put spinach in omelettes! Actually mustard greens I have been my very favorite since I was a child. But for some reason I always buy collards. This looks delicious and thank you for giving me yet another idea on how to use greens!
