After all the great recipes from the cookie-swap, I like Sam’s idea of the Sugar Low Friday, hosted by Beck’s and Posh. I like to bake with quark, it keeps the cakes moist, it is healthy and low in calories. So I decided to make the
Quark-Muffins
with lots of fruit and only little sugar.
The whole family loved them. Only one won’t damage your body.
You need:
150 g banana
1 egg
60 g sugar
7 g vanilla sugar
225 g low-fat quark
in french: fromage blanc ou caillebotte
60 g vegetable oil, 75 ml
1 organic lemon; grated peel
1/2 organic orange;grated peel
1 orange, the juice
200 g plain flour
2 tsp. baking powder
1 tsp. icing sugar
Method:
Preheat the oven to 200 °C.
Mash the banana(s). Whisk the egg add sugar, quark, Ol, bananamash, grated peels and juice. Mix the flour and the baking powder and fold into the wet ingredients.
Line a 12 cup muffin tin with paper liner. Scoop the batter into the muffin tin and bake for 30 minutes.
Dust with icing sugar and decorate with remaining orange peel.

I often see quark in local supermarkets but I have yet to try it. Thanks for your recipe I might go down that route one of these days. :)

looks good!^^…will definetly try it, but what happens if you dont add the quark? …it doesnt sound very appealing to use.
