SHF #29: Homemade chocolate pudding

SHFEmily from Chocolate in Context is hosting the 29th edition of Sugar High Friday 22.05.2021 **, the brain child of Jennifer at The Domestic Goddess 22.05.2021 **. The mission is simply prepare a recipe using an unrefined cacao product.

cocoa brand-gepaThe most untreated cocoa I could find is the same I used for SHF #27. This organic farming cocoa is produced by the farm cooperative “El Ceibo” in Bolivia. It is gepa’s objective to improve the living conditions of marginalized producers in the South by offering them a market chance in order to make it possible for them to take part in national and international marketing under fair conditions and to secure a decent living for them out of own efforts. Using this brand, I kill two birds with one stone: I get a tasty and delicious cocoa and I maintain the Fair Trade idea.

The difference between treated and untreated cocoa powder is obvious:

You need:
500 ml milk
20 g corn or potato starch
20 g rice flour
20 g cocoa powder
45 g sugar
pistachios, chopped
 
 
 
 
Schokoladenpudding 002
 
 
Mix starch, rice flour, cocoa and sugar. Whisk into milk, be sure that you have no cocoa lumps.
Bring to a boil constantly stirring. Remove from heat.

Cool down in cold water, constantly stirring.

Fill into bowls, cool completly and sprinkle with pistachios.

Wochenendkuchen: Kuchen mit Whisky-Sahne-Likör

Whisky-Likörkuchen 002Beim Einkaufen bin ich über diese Backform mit 20 cm Ø gestolpert. Ich besitze zwar schon eine, aber ich möchte demnächst ein Rezept ausprobieren, bei dem gleichzeitig zwei Böden gebacken werden. Also wanderte die Form in meinen Einkaufswagen. Whisky-Likörkuchen 001Dann fand ich beim Aufräumen unseres Zweit-Kühlschrankes im Keller noch einen Rest Whisky-Likör aus dem (L)aden. Was lag da näher, als dieses Rezept zu halbieren und die Form einzuweihen. Leider erwies sich die Form entgegen der Aufschrift für den flüssigen Teig nicht als auslaufsicher, ein paar Tropfen fanden den Weg auf den Boden des Backofens.

Der Kuchen hat 30 Minuten auf 200 °C gebacken und war dann gar. Er ist etwas dunkler als die Eierlikör-Variante in der großen Form. Aussehen tut er schon sehr gut, jetzt muss er nur noch abkühlen.

Auch nach dem Anschneiden zum Kaffee enttäuscht der Kuchen nicht.

8 Gramm   Backpulver
1 Prise   Salz

Zubereitung

Aus allen Zutaten einen Rührteig herstellen und bei bis 200 °C 30 Minuten backen. Anmerkung Ulrike, Kuchen war etwas dunkel, besser vielleicht 15 Minuten auf 200 °C und 15 Minuten 180 °C

*Ich habe normalen Zucker genommen und so lange mit den Eiern verrührt, bis er sich komplett aufgelöst hat.

WHB #75: Lentils with mustard cream and vegetable croutons

This week I am featuring lentils. Lentils have a very high protein content, about 25 % and are an important part of the diet for vegetarians. Apart from a high level of proteins, lentils also contain dietary fiber, vitamin B1, and minerals. Red (or pink) lentils contain a lower concentration of fiber than green lentils (11% rather than 31%). A variety of lentils exist with colors that range from yellow to red-orange to green, brown and black. The colours of the seeds when removed from the pods also vary, and there are large and small varieties. They are sold in many forms, with or without the pods, whole or split.The most famous lentils in Europe are Puy lentils, also called “caviar for the poor”. For my dish I used green lentils.

Ingredients

1     Onion, finely chopped
2-3 tablesp.   Oil
250 grams   Lentils, green
250 grams   Bologna (sausage)
400 grams   Carrots, finely diced
500 grams   Potatoes, finely diced
125 grams   Cream
2 tablesp.   Mustard, medium-strength
750 ml   Vegetable stock
      Salt, pfepper, sugar
2-3 tablesp.   Vinegar, e. g. balsamic vinegar

Directions

1. Heat 1 tbsp. oil in a saucepan and sweat onions until soft and transparent. Add vegetable stock, about 750 ml and bring to the boil. Rinse lentils and add to the boiling water. Cook about 15 to 20 minutes until tender.

2. Peel sausage and cut into fine slices. .

3. Stir cream and mustard into the lentils and simmer for further 10 minutes.

4. Heat 1-2 tbsp. oil in a pan and fry potatoes and carrots for about 10 minutes. Season with salt and pepper and remove from pan. Heat bologna slices in the pan.

5. Season lentils to taste with salt, pepper, vinegar, 1 -2 tsp. sugar and mustard. Serve sausage and vegetable cubes on lentils.
