The new theme in our Good Friends Good Food group is salad. Salads crave for fresh ingredients and because fresh peas and artichokes were not yet available here in northern Germany, I skipped the last two rounds. This week we make salads with cucumber chosen by Nancy. I know three kinds of cucumber: those for salads, gherkins and those for sweet and sour pickling and braising. The latter you have to peel. The salad cucumbers are mostly grown in warm or cold greenhouses. They are available all year round, so it is easy to forget about the true northern German season. The

combines the cucumber with the humble radish, one of the first spring vegetables.

Cucumber and Radish Salad With Yogurt and Cumin
Yield: 2 – 3 servings as a main dish

Cucumber and Radish Salad With Yogurt and Cumin is also delicious as a bruschetta or crostini topping.
Ingredients
- 1 salad cucumber, about 350 grams, seeds scooped out, halved, sliced very thinly with a mandolin*
- Salt to taste
- 1 medium-size bunch radishes (about 5 ounces), trimmed and sliced very thinly with a mandolin*
- ¾ teasp. nigella seeds
- ½ teasp. cumin seeds, lightly toasted and ground
- ¼ teasp. black pepper, freshly ground
- ⅛ teas. turmeric
- ½ teasp. curry powder
- 80 ml Greek style yogurt; Ulrike: Traum von Eiderstedt
- 1 small garlic clove, puréed on a garlic card*
- 1 tablesp. fresh lemon juice
- chives, chopped for garnish

Method
- Mix the cucumber slices with ¼ teasp. salt and and place in a sieve over a bowl or in the sink for 20 minutes. Drain on a clean kitchen towel. Transfer to a salad bowl and add the radishes and nigella seeds.
- In a small bowl stir the cumin, pepper, turmeric and curry powder into the yogurt. Whisk in the garlic and lemon juice. Add salt to taste. Toss with the cucumbers and radishes, garnish with chopped chives and serve Cucumber and Radish Salad With Yogurt and Cumin with bread.

I cannot imagine cucumber and radishes together having never had that. But this salad looks very appealing! It has some very interesting ingredients. I will add this to my list to try this summer!
This all looks delightful. I would love to be presented with this, it looks so fresh and inviting. I have never had Nigella seeds before so I am going to add that to my list of things to find and try. I love learning about new things, thanks for teaching me. A great use for both cucumber and radishes!
