In default of fresh cherries I used canned morello cherries. A great combination, the kids asked me to do it again.

Ingredients

H POPPY SEED MIXTURE *
40 grams   Poppy seed, freshly ground
30 grams   Milk
8 grams   Butter
10 grams   Butter
H PUDDING
50 grams   Bread crumbs
1/2 teasp.   Cinnamon
1     Lemon, zest and juice
75 grams   Butter
4     Eggs, divided
40 grams   Sugar
1 pack   Vanilla sugar
750 grams   Cherries
1 tablesp.   Sugar

Directions

1 . Soak poppy seed mixture for a while, than mix with bread crumbs, lemon zest, a pinch of salt. Whisk butter, sugar and egg yolks until foamy, add to the poppy seed mixture and gently fold in.

2. Beat egg whites with vanilla sugar until stiff. Fold into the poppy seed mixture. Butter some cups or individual pudding tins.

3 . Half fill a pan with water. Preheat oven to 180° C. Pop in the pudding tins and cook for about 35 minutes.

4. Wash cherries and remove pit. Cook with 1 tablespoon suger and some lemon juice for about 4 minutes. Remove puddings from oven, cool , turn on plates and serve with the compote.
