That’s a real challenge for a German food blogger. I live in the north of Germany, further the north of Hamburg, where the Mexican cuisine is not wide-spread. We have only one Mexican restaurant and that’s not the kind of food our children like.
In my bookshelf I found this book, bought during my travelling through California, Arizona and Texas. To tell the truth, I never looked into this cookbook till now. Many special Mexican ingredients are hard to get, like the tortilla corn flour or a great variety of chiles. I can order them in online shops. So I flipped through this book for an easy recipe to prepare and stopped at: Burittos, which are made by wrapping a filling such a refried beans or a beef and bean mixture in a large flour tortilla. They are usually held like a sandwich and eaten plain, but are occasionally topped with sauce.
Hoping that this cookbook autentically represents the Mexican Cookery, I accept the challenge and serve
Burritos
I could remember the taste! I hope I did not blame anyone with my German-stye Mexican cookery.
In the delicatessen section of our grocery I found guacamole, salsa and refried beans. I prepared myself the flour tortillas in my new pan which should be suitable for tortillas. It passed this test. I modified the recipe for Carnitas a la Casera – Home-Style Meats, but that should not matter.
My son got a special filling: Just refried beans and grated cheese.

Carnitas a la Casera cup
Guacamole or 1 avocado, sliced
4 (12-inch) flour tortillas
3/4 cup Canned or homemade refried beans, heated
1 cup Shredded lettuce
1/4 cup Homemade or canned salsa

Prepare Carnitas a la Casera and Guacamole. For each burrito, heat a
tortilla on a large ungreased griddle until hot and pliable but not
dry.
Place about 1/2 cup meat filling a little below center. Add
about 3 tablespoons refried beans, a little shredded lettuce and
about 2 tablespoons Guacamole or an avocado slice. Top with about 1
tablespoon salsa.
Fold sides of tortilla over filling to center.
Fold bottom over filling and roll up, enclosing filling completely.
Repeat with remaining ingredients. Serve immediately or burritos
will be soggy.
Variation:
:Dessert Burritos: Substitute frozen strawberries or apple pie
filling for filling listed above. Heat 1 /2 inch oil in a large
skillet to 365°F (185°C). Fry burritos until golden brown.
