I began to blog about herbs since the 20th edition of WHB 27.04.2021 ** and I still have fun. Last year I featured parsley as my favourite herb in combination with potatoes. This year I had a “little” problem with my herbs in the garden, but the thyme survived all attacks. 500 | grams | Carrots, finely diced | |
150 | grams | Shallots | |
1 | Red chili pepper, finely diced | ||
50 | grams | Parmesan, grated | |
350 | grams | Spaghetti | |
Salt | |||
2 | tablesp. | Olive oil | |
Pepper | |||
2 | tablesp. | Honey | |
2 | tablesp. | Thyme, the leaves | |
50 | grams | Pine nuts | |
1 | Lemon, the zest, grated | ||
125 | grams | Goat’s cheese |

Directions
1. Cook pasta until firm to bite. Sautée carrots, shallots and chili pepper in hot oil, salt and pepper and caramelise with honey. Cook on low heat about 5 minutes. Add the thyme leaves.
2. Toast pine nuts in a pan until golden. Add parmesan and pine nuts to the vegetable mixture and blend coarsely.
3. Arrange pesto with spaghetti, garnish with pieces of goat’s cheese and fresh thyme.

Very unique
What a very unique and interesting idea for a variation of pesto. I love the flavor of thyme with carrots, and the additions of pine nuts and goat cheese both sound wonderful! Thanks for helping us celebrate two years of WHB, and good luck with the kitchen remodeling!

Thyme for Cooking
I love carrots with thyme – and add in the goat cheese.. I’m guessing this was a bit hit at your house! I’ve done something similar with spinach, but now I have to try this.
Ich habe lange geschwankt, ob ich mit Karotten koche, dann etwas anderes gewählt. Aber Karotten und Thymian, lecker. Werde es bald versuchen.
If ever there was the perfect way to serve up all those delicious carrots from the garden..this is it. What an ingenious way to present them…and on pasta no less. Perfect!

I love organic carrots and always have several pounds on hand in the fridge, but I never thought to turn them into pesto. And I have lots of thyme in the garden that really needs to make its way into the kitchen. Thanks for such an inspiring recipe. Can’t wait to try it! : )
