Baked Peppers filled with Tomatoes and Feta
Yield: 2 servings
Nigel Slater recipe for baked peppers filled with tomatoes and Feta
Ingredients:
2 yellow peppers, large and ripe
175 grams cherry tomatoes, halved
125 grams feta, crumbled
8 olives, or some more stoned
8 tablesp. basil pesto; Ulrike: ruccola pesto

Instructions
Halve peppers and remove and discard any stalks, cores or seeds. Set the peppers, cut side up, in a roasting tin.
Give tomatoes in a mixing bowl and add the feta. Add olives to the bowl with a grinding of black pepper (no salt).
Stir in basil pesto then spoon it into the halved peppers. Pour enough olive oil into each to come up to the top. Bake for about 25 minutes (Ulrike: 45) at 180 °c/gas mark 4, until the top is lightly brown.
Leave the peppers to settle for 20 minutes before eating. While they are in the oven you may want to cover the dish with foil to stop the pesto from darkening. This is one of those dishes that seems more appropriate warm than hot.
YUM! These look so pretty and delicious. I would love to sit down to one of these on a cold winter night, not only does it look filling and tasty, but it adds so much color to a winter landscape. Lovely choice.
I’m sorry to hear that you’re having so much winter weather. Here in KY we have hardly had any snow and the weather has been like spring. Of course, I’m sad about that. I’d love a few good days of snow so I can use my fireplace. Doesn’t look like it’s going to happen!
I could eat these peppers regardless of the weather. I am crazy for feta cheese and I bet these are so good!
I like stuffing vegetables, especially peppers and zucchini. Lots of different combinations and they’re all good! I’ll have to give this one a try, I’m sure I’ll love them.
The color of summer here with the yellow pepper, tomatoes and olives puts a smile on my face. I don’t have to dream summer, I can taste it in this dish.
