Penne with spicy broccoli sauce

A delicous and easy dish with only a few ingredients.

Penne with spicy broccoli sauce shows that “Pasta always works”, even with broccoli

Ingredients:

  • 1 head broccoli, about 400 grams, cut into florets
  • 175 grams penne rigate, I used De Cecco*
  • 3 tablespoons olive oil, divided
  • 1 garlic clove, finely chopped
  • 1 chilli, finely chopped
  • 1 anchovy fillets, finely chopped
  • 1/2 lemon, juiced
  • 30 grams Parmesan cheese, finely grated plus more for garnish

Instructions

  1. Bring a large pot of salted water to a boil over high heat. Fill a large bowl with ice water. Cook the broccoli in the boiling water for about 5 minutes, or until it is completely tender. Using a slotted spoon, transfer the broccoli to the ice water and cool completely. Drain, pat dry, and coarsely chop the broccoli .
  2. Add the penne to the same pot of boiling water and cook, stirring often, for about 12 minutes, or until it is tender but still firm to the bite. Drain, reserving 4 tablespoons of the pasta water. Return the drained pasta to the dry pot and set aside.
  3. Meanwhile, heat a large heavy frying pan over medium-high heat. Add 2 tbsp. of the oil, then add the garlic, chilli, and anchovy. Cook for about 1 minute, or until the garlic is toasted. Add the broccoli and cook, stirring, for about 3 minutes, or until it is warm and beginning to release its liquid. Stir in 1/2 tablespoon of the lemon juice.
  4. To the pasta, add the broccoli mixture, 3 tbsp. of the cheese, and the remaining tablespoon oil. Toss to combine and season to taste with salt and more lemon juice. Add enough of the reserved pasta water to moisten as desired. Divide among 2 bowls, garnish with more cheese, and serve penne with spicy broccoli sauce

auch direkt daraus gegessen werden. Wenn dann noch die Sonne scheint, wird die Mittagspause zum kleinen Picknick. Ich habe das volle Pestorezept, aber nur die Hälfte der Pasta zubereitet. Ich hatte sogar das Glück, Mini-Mozzarellakugeln zu erstehen.

Menge: 4 Portionen

Pasta mit Basilikumpesto

Hier kommt die Pasta mit Basilikumpesto, Mozzarellakugeln und Tomaten als köstlicher Salat im Glas daher.

Zutaten:

FÜR DAS PESTO

  • 50 Gramm Pinienkerne
  • 60 Gramm Pecorino
  • 1 Zehe Knoblauch
  • 2 Handvoll Basilikumblätter
  • 100 ml Olivenöl; ca.
  • 1-2 Essl. Zitronensaft
  • Pfeffer, frisch gemahlen
  • 1 Prise Chilipulver

PASTA

  • 500 Gramm Kirschtomaten, rot und gelb; Ulrike: nur rot
  • 1 Essl. Olivenöl
  • Grobes Meersalz
  • Pfeffer, frisch gemahlen
  • 400 Gramm Pasta, kurz, z.B. Penne * oder Maccaroni
  • 250 Gramm Büffelmozzarella
  • 1 Handvoll Oregano
  • 1 Handvoll Basilikum

ZUBEREITUNG

  1. Für das Pesto Pinienkerne in einer Pfanne ohne Fett rösten, herausnehmen und abkühlen lassen. Käse fein reiben. Knoblauch abziehen und grob hacken. Basilikum mit Pinienkernen, Knoblauch und Käse in den Mixer geben. Fein pürieren, dabei das Öl untermixen, bis eine cremige Paste entstanden ist. Mit Zitronensaft, Salz, Pfeffer und Chili abschmecken.
  2. Backofen auf 200 °C/Umluft: 180 °C vorheizen. Tomaten waschen, in einen Bräter geben und mit 01 beträufeln. Mit etwas Salz und Pfeffer würzen und im Ofen in 10-15 Minuten weich backen. Tomaten herausnehmen und etwas abkühlen lassen.
  3. Penne in Salzwasser bissfest kochen, abgießen, mit dem Pesto vermengen und lauwarm abkühlen lassen. Den Mozzarella abtropfen lassen und in mundgerechte Stücke zupfen oder schneiden. Kräuterblättchen abzupfen. Zum Servieren Nudeln mit Tomaten, Mozzarella und Kräutern abwechselnd in kleine Gläser schichten.

Recipe from Curtis Stone for ribbon noodles with tarragon

Ingredients:

  • 200 grams dried ribbon noodles; Bandnudeln 8 mm< *
  • 12 gram Butter
  • 2 generously heaped teaspoons fresh tarragon leaves; coarsely chopped
  • Sea salt and freshly ground black pepper

Instructions

  1. Bring a large pot of salted water to a boil over high heat. Add the band noodles and cook, stirring often to prevent the pasta from sticking together, for about 9 – 11 minutes, until tender but still firm to the bite. Drain, reserving 2 tablespoons of the pasta water.
  2. In a large sauté pan over medium heat, stir the butter and the reserved cooking water until the butter melts. Add the pasta with tarragon and toss to coat. Season the fettuccine to taste with salt and pepper.
  3. Using a two-pronged carving fork, swirl some of the pasta around the fork. Slide the pasta off the fork and mound it in the center of a plate.
