It’s Asparagus Season in Germany! We Germans are fond of white asparagus, but only old varieties like Huchels alpha or Schwetzinger Meisterschuß have still the real “asparagus flavour”. They are hard to find and … expensive. I prefer the green asparagus, it needs no foil or mounds and it is easier to cut. For the white asparagus workers from other countries go out every morning before sunup and pick asparagus by digging a small hole in the mound, sticking a sharp knife into the dirt, aiming for the base of the shoot, carefully pulling out the shoot and filling in the hole with sand using a trowel. Green asparagus is so much easier to harvest.

Asparagus Salad With Hard-Boiled Eggs

A classic Italian salad topped with shaved Parmesan

Ingredients

  • 500 grams asparagus
  • 2 eggs, size M, hard-boiled
  • 1 tablesp. sherry vinegar
  • 1 tablesp. lemon juice
  • 5 tablesp. olive oil
  • 2 teasp. capers, rinsed and chopped
  • 2 tablesp. herbs, chopped; Ulrike; parsley and chives
  • salt
  • black pepper, freshly ground to taste
  • Parmesan, shaved for topping

Method

  1. Snap the woody ends off the asparagus. Steam for 5 – 8 minutes. Refresh with ice-cold water, then drain and dry on paper towels. Cut into pieces about 1,5 cm.
  2. Halve the boiled eggs in half, chop the yolks and whites separately, and season with salt and pepper
  3. In a salad bowl, whisk together the lemon juice and vinegar and olive oil. Season with salt and pepper to taste. Add the asparagus, capers and herbs, and toss together. Add the chopped egg yolks and whites, then toss together again and serve the asparagus salad with hard-boiled eggs with Parmesan shavings

Ingredients

  • 1 salad cucumber, about 350 grams, seeds scooped out, halved, sliced very thinly with a mandolin*
  • Salt to taste
  • 1 medium-size bunch radishes (about 5 ounces), trimmed and sliced very thinly with a mandolin*
  • ¾ teasp. nigella seeds
  • ½ teasp. cumin seeds, lightly toasted and ground
  • ¼ teasp. black pepper, freshly ground
  • ⅛ teas. turmeric
  • ½ teasp. curry powder
  • 80 ml Greek style yogurt; Ulrike: Traum von Eiderstedt
  • 1 small garlic clove, puréed on a garlic card*
  • 1 tablesp. fresh lemon juice
  • chives, chopped for garnish

Method

  1. Mix the cucumber slices with ¼ teasp. salt and and place in a sieve over a bowl or in the sink for 20 minutes. Drain on a clean kitchen towel. Transfer to a salad bowl and add the radishes and nigella seeds.
  2. In a small bowl stir the cumin, pepper, turmeric and curry powder into the yogurt. Whisk in the garlic and lemon juice. Add salt to taste. Toss with the cucumbers and radishes, garnish with chopped chives and serve Cucumber and Radish Salad With Yogurt and Cumin with bread.

  • 650 Gramm Weißkohl, fein geschnitten
  • 125 Gramm Karotten, geschält und mit der Juliennereibe * fein gehobelt
  • 1 rote Zwiebel, geschält und in Scheiben geschnitten
  • 1 Jalapeno, in feine Scheiben geschnitten
  • 2 Teel. Oregano
  • 18 Gramm Salz

ZUBEREITUNG

  1. In einer Schüssel den Kohl und die Möhren mit dem Salz verkneten, bis sich Saft bildet.
  2. Die geschnittene Jalapeño, Zwiebel und Oregano hinzufügen, gut vermischen und in das Bügelglas einschichten. Mit Gärgewicht beschweren, verschließen und fermentieren lassen
