I like the combination of strawberries and salmon, why not adding fennel to it amd serve as salad? I blanched the fennel so that it still had bite, but was easier to chew.

Strawberry Fennel Salad with Salmon

Stylish and summery recipe for Strawberry Fennel Salad with Salmon. It is tasty and takes only minutes to prepare

Ingredients

  • 200 grams smoked salmon torn into strips
  • 1 large bulb of fennel , trimmed, cored, halved and finely sliced into strips and blanched for 2 minutes in the steam oven
  • 50 grams rocket
  • 200 grams ripe strawberries , hulled and halved

DRESSING

  • 4 tbsp. olive oil; Ulrike rape seed oil
  • 2 tbsp. white wine vinegar
  • 2 tsp. wholegrain mustard
  • 1 tsp. runny honey
  • crusty rolls , to serve

Method

  1. In a small bowl whisk together the dressing ingredients, season if you want to; set aside. Put the smoked salmon, fennel, rocket and strawberries into a separate bowl.
  2. Drizzle the dressing over the salad and toss gently so everything glistens. Finish with cracked black pepper and serve with crusty rolls.

to start the day. Berries are full of vitamins and secondary plant substances and give a burst of energy. The strawberry season just started in Schleswig-Holstein. We have to wait for all other berries, so I used a frozen berry mixture for the recipe. The local strawberries are grown in foil tunnels. To tell the truth: They just look good, I wait for the self picker strawberries.

Yield: 2 servings

Berry Good is a good way to start the day

Ingredients:

  • 90 grams fresh blackberries
  • 90 grams fresh raspberries
  • 90 grams fresh blueberries
  • 5 strawberries, hulled and quartered
  • 1/2 lime, quartered
  • 160 ml cranberry juice

Instructions

  1. Combine all the berries end the lime in a mortar, and gently muddle with the pestle until the berries a coarsely smashed and exuding their juices. (Alternatively, blend the berries and lime in n food processor or blender.)
  2. Fill two glasses half way with crushed ice, and spoon the berry mixture over the ice. Pour the cranberry juice over the berry mixture, and serve.

Strawberries on Yoghurt

The recipe is as simple as delicious.

Clean and hull the core from 500 g strawberries, cut into pieces and place in a medium bowl. Add 3 tablespoons of powdered sugar and serve for each portion on 150 g cream yoghurt. Chill before serving.
